You can. Click on the entry node and you can toggle variables by clicking on them. Then when you call that flow, you have the option to provide those variables. To export variables from a flow, click on the exit node and then toggle them. You can then call these vars with {{workflow.YOUR-FLOW-NAME.varName}}
