Hey Botpress team! 👋 I'd like to request EU-hosted LLM options to be added to standard plans. Currently, while Mistral AI is available, it's not hosted in the EU, which creates significant compliance barriers for European users. The Problem - Mistral models aren't EU-hosted despite being a French company - This blocks EU businesses needing GDPR compliance and data residency guarantees

In this case, the problem is with Mistral; OpenAI has the same issue.
